Meals,food and drinks A. CZECHOSLOVAK CUISINE Czech cousine is charakterized by a lack of vegetables and by such heavy foods as dumplings, pork and goose. Beef is usually served with its own gravy or with cream sauces. Relatively little veal and mutton is eaten, and fish is mainly limited to Christmas, when every family has fried carp on Christmas Eve. Czech national dish ist roast pork with dumplings and cabbage or sauerkraut. Roast goose is served on festive occasions. The dumplings are made from a dough consisting of flour, milk, egg yolks, yeast and stale rolls cut up into cubes. For snacks or light meals, Prague ham is very popular, as are sausages of various kinds, espetialy frankfurters. The later are often sold at street stalls. Czech pastries and sweets can be real delicacies. One of the most delicious sweet dish - sometimes eaten as a meal in itself and some times served as a dessert - is called fruit dumplings. These are made from various types of dough ( which may include cottage cheese or po tatoes ), depending on the custom of the region. They are very popular when filed with cherries, apricots, plums or other fruit in season, and are served with sugar and cottage cheese; melted butter is poured over them. Slovak cuisine differs from Czech cuisine - it's closer to Hungarian cooking. In preparing goulash the Slovek use much more paprika, pepper and other spices than the Czechs. Slovak food is served with wine, while in Czech lands beer is the most popular drink. The well-known spirit slivovitz ( a kind of plum brandy ) comes mostly from southeast Moravia. B. British and Czech meals BREAKFAST - early morning meal. It is usually solid meal, but many people do not eat anything at breakfast. Great Britain - It usually consists of some eggs with bacon or white bread with jam or butter, but certainly everybody eat something other. Our country - It isn't so important. The most of people gloss over it or even do not have it. LUNCH G.B. - Between 12 and 2 p.m. is served meal called lunch in the hotels, restaurants and middle class homes. The same meal is called dinner in the homes of working class. Our country - Dinner is the main meal of all day and that's why it's very solid. AFTERNOON TEA - from 4 to 5 p.m. In our country it's called snack. DINNER - This meal is served from 7 till 9 p.m. and ussually it is only light meal. SUPPER - It's late evening meal, which people eat after returning from some party. Slovíčka to gloss over - odbývat C. RECIPES Pork goulash with sauerkraut ( Vepřový guláš se zelím ) 500 g pork (shoulder), salt, caraway seed, 80 g lard, 50 g onion, l stock or bouillon cube, 350 g sauerkraut, 1/8 l sour crem, 40 g flour, 1 teaspoon paprika, 2 cloves of garlic Cut the meat into cubes,season with salt and caraway seed.Fry chopped onion in half of the lard,add the meat and fry.Add some stock and simmer till almost tender.Add the chopped sauerkraut, a little more stock and simmer till the meat is tender.From the remaining lard prepare roux with flour,dilute it with stock and cream,whisk well and boil.Finally add some paprika browned in a little fat,pour sauce over the meat flavoured with crushed garlic. Simmer the meat for a while.Serve with dumplings. Braised mutton with vegetables Dušené skopové maso v zelenině 800 g mutton ( shoulder, leg, breast ), salt, 1OO g carrot, 100 g ce- leriac, 50 g peas, small kale, 50 g onion, 80 g butter or lard, 30 g flour, pinch of pepper, stock or bouillon cube Cut the meat into cubes, cover with salted water and simmer till tender. Then add sliced carrot,celeriac,peas and chopped kale. Simmer till the vegetables are tender. Fry finely chopped onion in butter or lard, dust with flour, brown, add pepper, dilute gradually with the meat and vegetable stock and bouillon stock, if necessary. Add the meat and vegetables to the gravy, heat without boiling. Pour over boiled potatoes or boiled rice. Potato Salad I need 1 kg potatoes, 2 large onions, some cucumbers, lemon juice, mustard, salt and pepper. I must peel and cook the potatoes in salted water and then leave to cool. Meanwhile I can chopp onions and cucumbers. Then I've to cut the potatoes into small cubes and mix them with chopped onions and cucumbers. Then I will add lemon juice and I'll season it. After then I must mix mustard into potatoe salad and chill it in fridge. D.
